PUNJABI CABBAGE RECIPE

INGREDIENTS
4 tbsp. olive oil
1 small onion, sliced
1 tsp cumin seedsÂ
2 cloves of garlic, finely chopped
1-inch (2.5 cm) piece of ginger, finely chopped
2 green chilies, finely chopped
1 tsp turmericÂ
1 lb. 2 oz. (500 g) cabbage, sliced
salt to tasteÂ
10.1 tsp garam masala
METHOD
▪ Heat the oil in a large, heavy-based frying pan or wok
and add the onion. Fry for a few minutes while stirring until
the onion is transparent.
 ▪ Stir in the cumin seeds and fry for a minute. Add the
garlic, ginger and chilies, and stir-fry for a minute or two
until aromatic.Â
▪ Stir in the turmeric, followed by the cabbage. Stir-fry the
cabbage on medium to high heat for 2 or 3 minutes and
add in about 2 tablespoons of water and the salt.
▪ Turn down the heat a little and cook the cabbage for
another 15 minutes, stirring frequently and adding a little
more water if required to prevent it sticking to the bottom
of the pan and burning.
▪ Stir in the garam masala and serve
